Abstract
Ice cream jamu tradisional is an ice cream product by adding traditional herbs.
Traditional herbal medicine less desirable by the community, especially children. Made ice
cream creations with traditional herbal hoped that the people are more interested to
consume traditional herbal (turmeric and tamarind, curcuma, and zeodary) is also
beneficial to increase appetite. This type of research is a quantitative experiment with a
complete randomized design of one factor. The population is traditional herbal medicine,
the sample is ice cream with 4 treatments, ice cream without additions, ice cream with the
addition of sour turmeric, temulawak, and zeodary. Each treatment amounted to 65 ice
cream cups distributed to 65 respondents, 30 trained panelists and 35 children's consumer
panelists. Data on organoleptic test results were then analyzed using Anova One Direction.
Data has been obtained showed hat effect of traditional herbal extract on organoleptic ice
cream. The best ice cream is ice cream with the addition of turmeric and tamarind extract
with the sweet taste criteria, not bitter, not limp (average 4,17), light yellow color (average
2,83), aromatic of milk and herbal medicine (average 2,83), soft texture (average 4,03),
with favorable level trained panelists and children's consumer likes (average 3.77 and
3.80). Traditional herbs are less desirable by the society especially children, so it is
necessary to diversificate variable traditional food product to be liked by the society which
is an ice cream made by traditional herbs.
